Vinification
The grape is harvested manually and is received at the cellars intact. After
a cold maceration of 5 days at 12 °C, the wine is fermented with an
intense extraction of color. A post-maceration of 5 to 10 days gives the
wine heavy tannins. The wine is bottled after 18 months of aging in tanks,
followed by transfers and filtering.
Tasting Notes
Notes of vanilla enhance blackberry, plum and dried fig aromas. Intense
berry characters combine on the palate with ripe tannins to create a
delightfully smooth texture. Full bodied with elegant tannins. Well
balanced with a good and long finish.
Suggested Foods
This wine is a good companion for beef, lamb, duck and pasta. |
